Grill pans are usually a mixed blessing - they either cook well and are impossible to clean or cook poorly, and are still impossible to clean. The cast-iron grill pans are well known as high-performers on the cooking side, but even the Le Creuset enameled grill pans sometimes require prolonged soaking. Non-stick theoretically should change the equation, but Teflon-based non-stick shouldn't be used with high, dry heat, and some of the "green" ceramic non-stick coatings are very fragile, and quickly deteriorate after only a handful of uses. On top of that, cast-iron is usually the only option if you use an induction range.
The Scanpan IQ grill pan changes everything. It cooks well - good char lines, good flavor, and it cleans up easily. The coating is holding up well after several uses. Scanpan terrific
I have an induction cook top and Scanpan is a must, non stick, durable and clean design. Griddle a nice compliment and can be used as panini maker.
